Easy Crockpot Potato Soup

Ingrediets

30 oz frozen shredded potatoes

32 oz of chicken or veggie broth

1 can cream of chicken soup, mushroom or onion soup (just pick your favorite/ what is in your pantry,  if you use the cream of onion I would suggest not adding the chopped onions)

1/2 cup chopped onions

1/2 tsp black pepper

1/4 tsp garlic powder

8 oz cream cheese (NOT fat free, it won't melt in properly)

Bacon, sour cream, chives and whatever else you like for garnish.

Combine everything except for the the cream cheese in the crockpot.  Set of low for 6-8 hours or high for 4-5.  About an hour before the soup is done add in the cream cheese and let it melt in stirring occasionally.  Top with any favorites - cheese, bacon, chives, green onions, sour cream.

I have been feeling a bit under the weather lately.  Not quite knocking me off my feet, but just enough to make me sleep for like 4 extra hours a night. Yikes.  This soup was so easy, and made me feel so much better.  The ingredients are something you could keep around at all times for an emergency meal. 

If you had a nice set up with various different toppings,  this easy meal could make you look like a rockstar.  And who does not want to look like a rockstar?
